My current brake setup is an OE calipers on generic cross-drilled/slotted rotors w/ EBC redstuff pads, everytime I'm on downhill then I dig on the brakes, there's like a grinding-vibrating noise, should I be using a bigger calipers?

It's probably your rotors. Cheap rotors, especially if they're drilled, are prone to noise/vibration. Aggressive pads probably aren't helping with that.

That's what I suspected. Ever since I got those rotors, everytime I dig on the brakes is a disaster.
