So I was contemplating a 2.6L stroker kit from BC and was curious what if I want to increase bore size also do these kits offer different sizes or do I have to get new ones.

Generally speaking, they will supply whatever diameter pistons and rings you ask for. Will you be doing this or having a professional shop build it?

I have a local shop that does machine work for me. I recently had my k20a2 head port & polished along with new seats and guides. Just needs some valve springs and cams to complete my cylinder head

It could but generally the less "stuff" you do to the block, the better. It really depends on the application, though. Your builder should be able to advise you on that.

you def would need to sleeve your block to net 2.6L. assuming it's a k24 block the bore would have to be 90mm and the stroke 102mm. I wouldn't go past 88mm on stock sleeves
